For my second new recipe I went with another take on a fruit salad.... I bought a massive watermelon and a friend reminded me about this recipe I'd sent her but never tried myself. (originally copied from a GDT post by Amazon13...thanks!)
Watermelon & Feta Salad
4 cups chopped watermelon
1/2 cup crumbled or diced light Feta cheese
Chopped fresh basil (or thyme or oregano or whatever you like!)
Splash red wine vinegar
Healthy glug of olive oil
Pinch of salt & pepper
Mix it all together and enjoy! Best if let to marinate in fridge for a while (especially if you use dried herbs...give them time to soften up).
I served this with cold leftover roast chicken as a light lunch. Yum!
WW = Makes 4 x 1 cup servings @ approximately 2 points per serving (depending on how heavy handed you are with the oil and feta).
